The University of Georgia Food Services recognized Grandma Carol as the Winner of its 1990 Tribute to Mother’s Day Recipe Contest. Her Recipe for Poppy Seed Chicken was the featured meal on May 10, 1990.
To this day, it is still a favorite at UGA.
1 Chicken or 6 breasts
2 cans, Cream of Chicken Soup
1 8 oz Sour Cream
2 TBLS Poppy Seeds
Topping:
1 TBLS Poppy Seeds
1 and 1/2 Pkgs of Ritz Crackers
1 stick Margarine/Butter
Boil and shred chicken. Mix with soup, sour cream and 2 TBLS poppy seeds. Spread evenly into 13×9 pan. Mix topping ingredients and spread over the top. Bake at 350 degrees for 45 minutes.
